I am not a huge drinker. I like an occasional glass of wine ( white, usually Sauvignon Blanc) with dinner, but as a rule I try not to drink except on weekends, and never at home. I will admit though, I have a weakness for margaritas. This is probably not a surprise with my love of Mexican cuisine. However, I don’t just like any margarita. I like mine completely free of added sugar, and preferably very spicy! When I am at a restaurant instead of ordering a margarita I usually ask for a tequila gimlet on the rocks, or lime juice and tequila on the rocks. I find that much easier than saying, “I’ll have a margarita, no triple sec, no simple syrup.” If there is some sliced jalepeno, habenero, or serrano peppers that can be add to my drink that is even better! I then add 2-3 drops of the liquid stevia I always keep in my purse, and instantly my drink is the perfect balance of spicy, tart and sweet. Perfection.
My exception to my no drinking at home rule is when I am hosting a party. I like to enjoy a cocktail or two along with my guests. Also, I will never serve something I have not sampled myself. This Spicy Margarita is a great party drink. You can infused the tequila ahead of time ( just make sure to eventually take the jalapeños out of the jar or your tequila will just get spicier and spicier), and then make the drinks to order for your guests. If you don’t feel like playing bartender you can also set up a make your own margarita station with all of the ingredients and step by step instructions for your guest to serve themselves!
- 2 oz jalepeno infused tequila (see recipe below)
- 2 oz fresh lime juice
- A few mint leaves
- Liquid stevia
- Muddle the mint at the bottom of a glass to release its oils
- Fill glass with ice
- Add lime juice and tequila
- Add 3-5 drops of stevia
- Adjust sweetness to taste
Jalepeno Infused Tequila
- 1 bottle good quality clear tequila ( I like Patron)
- 3-4 jalepeno peppers
- air tight tight glass jar
- Empty the contents of the tequila bottle into the glass jar
- Slice the jalepeno peppers into rounds and add to the tequila
- Seal jar and allow tequila to infuse for 2-24 hours depending on desired spice level
- When tequila reaches desired level of spiciness, remove the jalapeño slices. This can be done with a strainer.
